Sandvik 12C27 is the designation of the steel which you find in all stainless knife blades made by EKA. This is a closely-monitored, high-quality Swedish steel specially developed for knives & surgical instruments. The knife blades are hardened to 57 - 59 Rc which makes the edge durability outstanding. Competitive tests have shown that the edges of EKA knives retain their edge much better than knives from many other leading manufacturers.
